One of my favorite things to make to bring to any summer barbeque or party is a pasta salad. Almost everybody loves it and they are super easy to make and put together. You can also make so many different variations.
Who doesn’t love an easy pasta salad! I have made this easy pasta salad for many many parties. I always get requests to bring it whenever we are going to other people’s houses. Even though it’s probably best to pair with summer food, you can easily make it all year round.
The best part about it is it only takes just a little time to put together. When I say a little time, it only takes the time it takes to cook the pasta.
This pasta salad is only four ingredients. The pasta, the add ins and the dressing. The best part about it is you add in more items if you’d like or just leave it as is and it’s delicious either way!
One box of tricolor rotini
Half a block of cheese cut into cubes (I like to use either sharp cheddar or Harvati, but you can use any kind you like!)
A bottle of Ken’s light Caesar dressing
Step 1: Start boiling the water for the pasta. Follow the instructions on the package to cook the pasta to be firm.
Step 2: While the water is boiling and the pasta is cooking, cut up your cucumber and cheese into cubes.
Step 3: Once the pasta is done cooking, strain the pasta in a strainer and rinse with cold water. Continue to rinse until the pasta feels cold to the touch.
Step 4: Put the pasta, cucumber and cheese into a large pan or bowl and mix together.
Step 5: Add about half the bottle of the Caesar dressing and stir well. If serving later, add the rest of the bottle of dressing after taking it out of the refrigerator. If serving right away, put a little additional dressing in and leave the bottle with the pasta salad so guests can add more as they like.
This recipe can easily be doubled or tripled if you are attending a larger party.
